- Wash the chicken with water and remove any excess fat
- Clean the neck and rib areas from any impurities
- Prepare a soaking solution with 3 liters of water, 5 tbsp salt, and ½ cup white vinegar.
- Soak the chicken in the solution for 30 minutes.
- Rinse the chicken thoroughly with fresh water after soaking
The Ginger-Lemon Method (Recommended):
- Prepare the Paste: Blend one whole lemon with 1 tbsp of ginger and 1 tbsp of salt until smooth
- Application: Rub this paste thoroughly all over the chickens and let them rest for 30 minutes.
- The Result: This method tenderizes the meat and effectively removes any "unwanted" scents (Zfara)
- Final Touch: Rinse with tap water, drain well, and pat dry.
Marinating (The Chermoula) for Moroccan Chicken Recipes
Soak saffron threads in a cup of hot water for 10 minutes
- In a blender, combine the saffron water, ginger, turmeric, salt, pepper, garlic, and the pulp of the preserved lemon. Blend until smooth.
- Rub the chickens inside and out, and under the skin, with this marinade
- Trussing: Tie the legs firmly with cooking twine.
- Resting: Cover and refrigerate overnight (or at least for 1 hour) for deep flavor penetration.
The Cooking Process for Moroccan Chicken Recipes
First Phase: Place 0.5 kg of diced onions in the pot. Lay the chickens on their backs. Pour any remaining marinade into the pot
- Adding Water: Pour 2 liter of hot water down the side of the pot (not over the chickens) to keep the spices on the meat for 15 min
- Second Phase: After 15 minutes of boiling, add the oil and flip the chickens onto their chests. Simmer on medium-low heat for 30 minutes
- Pro Tip: Adding oil later prevents the skin from tearing. Pierce the chickens with a skewer during cooking to release juices and ensure even heat. Keep the lid slightly ajar to let steam escape
Creating the "Daghmira" (Caramelized Onion Sauce)
- Once cooked, remove the chickens carefully using a plate to maintain their shape
- Refining: Strain the broth and mash the cooked onions through the strainer back into the pot.
- Caramelizing: Add the remaining 2.5 kg of sliced onions and more oil Let the mixture cook and simmer for 40 minutes until the onions are tender and have absorbed the flavors of the broth
- The Liver: Boil chicken livers with water, vinegar, and bay leaves for 5 minutes (to remove impurities). Cut into 2cm cubes and add to the onion sauce for 30 min
- Continue stirring until the sauce reduces completely, and the oil separates from the onions, turning them into a dark, rich "Daghmira.
Roasting for the Golden Look for Moroccan Chicken Recipes
Place chickens on a baking tray lined with parchment paper
- The Secret Touch: Brush the chickens with the flavored oil collected from the top of the Daghmira sauce
- Oven Settings: Bake at 180°C. Start with 20 minutes of bottom heat, then turn on the top broiler. Roast slowly until golden and crispy but not dry

- Serve the golden roasted chickens on a large platter, surrounded by the rich Daghmira sauce, and garnished with olives and preserved lemon strips

These spice measurements are used twice: first for the marinade (rubbing the chicken) and then the same amounts are added directly to the pot during cooking (except for salt, which should be adjusted at the end)
