Introduction
How to Make Moroccan Tfaya is a traditional Moroccan side dish served with rich and festive meals such as Moroccan couscous and Rfissa with chicken. It is mainly made from caramelized onions and raisins slowly cooked over low heat with spices like cinnamon, ginger, turmeric, black pepper, and saffron.
Known for its sweet flavor balanced with warm spices, Tfaya is usually placed on top of the meat in the center of couscous or served in separate bowls. Tfaya adds a deep, rich, and harmonious taste and is considered an essential touch in Moroccan feasts and family gatherings

  • 250 g  raisins, soaked
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp turmeric
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 3 tbsp sugar
  • 1 g Saffron
  • ½ cup vegetable oil

  • 100 g raisins, soaked
  • ¼ cup cooking oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp turmeric
  • ½ tsp ginger

💠Method 1: The Skillet / Pan Method
  1. Soak the raisins: Begin by soaking 250g of raisins in cold water for 2 hours

  2. Sauté the onions: In a pan, combine a little cooking oil, sliced onions, spices, smen (Moroccan clarified butter), and saffron.

  3. Place over low heat, cover with a lid, and stir occasionally for 30 minutes.
  4. Add raisins and sweetness: Drain the soaked raisins and add them to the pan. Add another half teaspoon of cinnamon, followed by 3 tablespoons of sugar or flower honey (or any light-flavored honey).

  5. Caramelize uncovered: Leave the mixture to finish cooking uncovered so the liquids can evaporate, allowing the raisins to plump up and caramelize perfectly.
  6. Simmer low and slow: This caramelization process takes about another 30 minutes over low heat. Keep the heat low to prevent the sugar from burning, which would create an unwanted bitter taste.
  7. Watch the color: The Tfaya should turn a rich, deep dark color and become beautifully caramelized to achieve a concentrated, delicious flavor

  9. The final touch: Traditionally, Tfaya is garnished with fried crushed almonds or toasted almond flakes just before serving.
💠Method 2: The Pressure Cooker Method
  1. Combine the base ingredients: In a pressure cooker, add 1/2 cup of cooking oil along with the sliced onions
  2. Add spices and water: Add 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of turmeric, 1 teaspoon of ginger, and 1 teaspoon of ground cinnamon (or 2 cinnamon sticks). Add saffron if available, followed by 1/2 cup of water.

  3. Pressure cook: Mix everything well, close the pressure cooker, and place it over medium heat. Once the pressure valve starts whistling, lower the heat to low and let it cook for 20 minutes.
  4. Add sweetness and raisins: Open the lid carefully. Add 250g of soaked raisins, another 1/2 teaspoon of ground cinnamon, and 3 tablespoons of sugar.

  5. Caramelize and reduce: Leave the pressure cooker uncovered over low heat to allow the liquids to evaporate. Stir continuously for about 20 minutes (or slightly more) until the Tfaya turns a rich deep dark color and becomes beautifully caramelized. Once it reaches this perfect thick consistency,

  8. Pro Tip: If you are preparing this Tfaya specifically to accompany Moroccan Couscous, you can enhance it by adding pre-cooked (boiled) chickpeas and 1 cup of savory couscous broth during the final caramelization stage.

Notes

  • Tfaya Pairings: If you plan to use this Tfaya for dishes other than couscous (such as certain tagines or modern presentations), there is no need to add chickpeas.
  • Oil vs. Butter for Perfect Shine: While some cooks prefer using a tablespoon of butter, using oil is highly recommended. The oil allows the onions to caramelize beautifully and gives the Tfaya a gorgeous, glossy shine, whereas butter can leave the texture looking dull.
  • Naturally Sweet Option: If you prefer a refined-sugar-free version, you can completely skip the sugar or honey. The natural sweetness of the raisins and caramelized onions is often enough to satisfy the palate.
  • Scaling Down the Recipe: To make a smaller batch, you can easily use about half the amount of onions (around 3 large onions) combined with 1/2 teaspoon of each spice, while following the exact same preparation steps.
