3 Ways to Cook Marrakesh Tangia
Marrakesh Tangia is a premier meat dish, widely regarded as a luxurious choice for formal occasions. It can be prepared using beef, lamb, goat, chicken, or even cow and lamb trotters. Whether cooked in large quantities for ten people or as a single individual portion, this dish remains a symbol of authentic Moroccan culinary heritage.

Ingredients
- 4 kg or more Beef shank, Lamb (with bones), or neck meat
- 2 tbsp Cumin seeds
- 1 tbsp Smen (Moroccan preserved butter)
- 1/2 tsp Pure Saffron
- 150 ml Water (1 cup)
- 1/2 cup Olive oil
- 1/2 to 1 Preserved Lemon Preserved Lemon (Hamed M'sayer)
- 1 or 2 Whole head Garlic (or 8 cloves)
- 1/2 tsp Salt (optional, depending on the saltiness of the lemon)
Method
💠 Preparation (Meat Tanjia Marrakchia)
- Place the meat in the clay Tanjia first. It is preferable to place pieces with bones at the bottom to prevent the meat from burning.
- Meat chunks should be large as they shrink and withstand long cooking.
- Seasoning: Add half a preserved lemon (remove seeds only as they are bitter). Add salt only if the lemon isn't very salty.
- Add olive oil, Smen, and garlic (either a whole washed head or 8 cloves, some minced and some whole)
- Spices: Rub the cumin seeds between your hands before adding.
- Add the saffron to the hot water and pour it over the meat. We use a small amount of water because the meat will release its own juices.
- Sealing: Cover the Tanjia opening with cooking paper and tie it tightly with a string.
- You can write your name or a specific time on it to distinguish it at the public oven.
- Add a layer of aluminum foil on top. Shake the Tanjia well to mix the ingredients
💠1 -Cooking Traditional (Meat Tanjia Marrakchia)
- Take it to the "Fernatchi" (the person in charge of the traditional wood oven). It is cooked in the "Ramad" (hot ashes).
- It takes about 4 to 5 hours, or sometimes an entire night, depending on the meat type and the intensity of the embers.
- Reheating: If brought home and cooled, reheat it in an electric oven at 150°C to keep it moist, or place the Tanjia in a large pot of boiling water.
- Serving: Pour it into a large plate. It can be garnished with fried almonds for a modern touch, though traditionally it needs no garnish. It is served with Moroccan bread
💠2-Electric Oven Method (Meat Tanjia Marrakchia)
- Cook at 250°C (heat from the top). After 1.5 hours,
- shake the Tanjia to redistribute the juices, then continue cooking for another 2.5 hours (Total: 4 hours)
- In foreign countries, they have invented new ways to cook it, such as a tin bucket in which they put charcoal and use it to cook the Tanjia,
- or by making a hole in the ground, placing charcoal in it, and cooking it
- A makeshift oven can be made by bringing a tin pail, putting charcoal in it,
- and letting it burn well until the fire subsides and becomes embers.
- If we have previous ashes, we do not throw them away; we add the embers to them and use them because they are important in this recipe to distribute heat evenly without burning.
- At that point, the Tanjia is placed and cooked in the same way, but it must be stirred from time to time to know if the water has evaporated or not.
- Cooking it requires skill and experience from 3 PM to 8 PM. After another hour,
- shake it; you can open it to see if it is cooked or not, just for those who do not have experience, to avoid burning it
💠3- Pressure Cooker Method (Meat Tanjia Marrakchia)
- Place all ingredients in the pressure cooker with 200ml of water.
- Close it and set to high heat until it starts steaming, then reduce the heat to the lowest possible setting. Cook for 45 minutes to 1 hour and 15 minutes depending on the meat.
- The goal is to achieve a very thick sauce consisting mainly of oil (Lidâm). If the sauce is too watery,
- keep simmering until it reduces and thickens perfectly
- This is the final result after cooking
