1-Greek Horiatiki Salad
- 💠Pickling the Onion: First, slice the red onion into thin rings
- and submerge them in vinegar
- Seal the container and leave it in the refrigerator for two hours to pickle.
- This makes the onion tender and reduces its sharpness.
- 💠Preparing the Greens: Prepare the lettuce by washing it thoroughly with water and vinegar to ensure it is clean and free of any debris or insects.
- 💠 Assembly: Chop the lettuce into large pieces and place them in the serving bowl.
- Add the halved cherry tomatoes, followed by the sliced black olives and sliced English cucumber. .
- Add the two avocados (diced into cubes) and the Feta cheese cubes, scattering them over the entire dish
- 💠Preparing the Dressing: In a separate bowl, mix the olive oil with 1/2 teaspoon of ground oregano, the juice of half a lemon, and 1/2 teaspoon each of salt and black pepper.
- You can also add a tablespoon of the onion pickling liquid for extra depth.
- Add only 1/2 clove of garlic; we want a hint of flavor without it being overpowering.
- 💠Serving: Drizzle the dressing over the salad just before serving,
- or serve it in individual side containers.
- The dish can be prepared in advance without the dressing until the moment it is served to keep it fresh.
💠Method 2: Preparing Greek Horiatiki Salad
- Choose fresh, room-temperature tomatoes
- Roughly chop the tomatoes into large, uneven chunks
- Sprinkle them with salt and let them sit to release their juices, as this will become part of the dressing
- Peel the cucumber, leaving some strips of the skin on
- Slice the cucumber lengthwise, then cut into small, half-centimeter thick semi-circles
- Select deep red onions and slice them into very thin rings; you can use a mandoline slicer for this
- Place these ingredients in a bowl
- Add a pinch of freshly ground black pepper
- Pour in 1/2 cup of extra virgin olive oil and the vinegar
- Add a tablespoon of dried oregano
- Halve the olives and add them to the mix
- Toss everything together well
- Transfer to a serving plate, then place the feta cheese either as a single block with a drizzle of olive oil on top, or crumble/cube it and scatter it over the entire dish
- Finish with a light sprinkle of dried oregano
Notes
- Some Greek salads include thinly sliced green peppers, depending on regional traditions and personal preference
- For a delicious twist, you can use oven-roasted red peppers cut into strips
- While people in Northern Greece use red wine vinegar for a tangy flavor, we substitute it with apple cider vinegar as a great Halal alternative
- Always use room-temperature tomatoes; keeping them in the fridge causes them to lose their natural sweetness and delicious flavor
