  • 4 tbsp extra virgin olive oil

  • 60 g Fresh Basil Leaves
  • 6 Pieces Walnuts
  • 2 tbsp Pine Nuts (for garnish)
  • 1-2 Cloves Garlic
  • 1/2 tsp Salt
  • 100 g Parmesan Cheese
  • 150 ml Extra Virgin Olive Oil

  • 3 Tomatoes, sliced
  • 300 g Burrata cheese, sliced
  • 4 tbsp Pesto sauce
4-Caprese Salad with Cherry Tomatoes and Pesto Sauce Ingredients
  • 400 g Cherry tomatoes
  • 200 g Fresh mozzarella pearls/mini balls
  • 10 Basil leaves, coarsely chopped
  • ½ tsp salt
  • 2 pesto sauce

  • 3 Beefsteak tomatoes
  • 300 g Mozzarella or Burrata slices
  • 20 Basil leaves
  • 3 tbsp balsamic vinegar

Method

  1. Choose ripe, sweet red tomatoes; Beefsteak tomatoes are especially the best for this recipe

  2. Slice the tomatoes into 1 cm thick slices.
  3. Slice the Buffalo Mozzarella, regular Mozzarella, or Burrata into 1 cm thick slices.
  4. Wash the basil leaves and remove the thin stems to avoid any excess bitterness.
  5. Arrange the salad by layering a tomato slice, followed by a cheese slice, and then a basil leaf.
  6. Repeat the process in the same order until the entire plate is complete.
  7. Drizzle with olive oil and sprinkle with a pinch of salt.

2- Preparation Method: Pesto Sauce
  1. In a food processor, place the selected basil leaves (without stems) to avoid any bitterness in the sauce
  2. Prep the garlic by removing the inner germ (the core) so the flavor isn't too overpowering.
  3. Add the walnuts, pine nuts, salt, and 1/4 cup of olive oil. Pulse the processor intermittently until coarsely mashed,
  4. rather than blending it into a smooth juice-like consistency.
  5. Open the processor and add the remaining basil leaves and another 1/4 cup of olive oil.
  6. Blend again until you achieve a homogeneous sauce. You can control the consistency by adding more oil if needed.
  7. You can use half the ingredients to prepare a smaller portion.

3- Preparation Method: Caprese Salad with Pesto Sauce
  1. Slice the tomatoes into thin slices, about 1 cm thick.
  2. Slice the Burrata ball into 1 cm thick slices.
  3. Slice the Burrata ball into 1 cm thick slices.
